What do the different grades of eggs mean?
Grade A is the most common grade sold to consumers, while Grade B is usually reserved for commercial uses such as bakeries. Grade A eggs come in 5 sizes: extra large, large, medium, small and peewee. How do you tell if an egg is fresh? The shell of a fresh egg has a dull finish. When opened, the thick part of the white should be very thick and should be greater in volume than the thin runny part. The yoke should look glossy yellow. |
