What are the secrets of great Mexican food?
For best results, nearly all Mexican cooking except frying is done over a slow fire. This is not practical in most situations, so cook the food slowly over low heat - high enough to simmer. Real Mexican cooking uses lard or bacon grease. If oil is listed as an ingredient, use olive oil whenever possible. Fresh garlic should be used if possible, otherwise powdered garlic may be substituted. Cheese should be Mexican cheese, monterey jack, longhorn or cheddar. |
