What's the secret to making pasta that's just right?
When cooking pasta, remember that it will expand to about twice its original size when cooked. One serving of pasta equals about 1/4 cup uncooked. Make sure your water is boiling rapidly, then add 1 tsp. of salt per quart before adding pasta to water. Rinse cooked pasta first with cold water to remove surface starch, then with hot water to remove even more excess starch and to reheat the pasta. |
