Cherry Oat Bars Recipe
CHERRY OAT BARS
Base:
1 c. flour
1 c. brown sugar
1 c. rolled oats
2 tsp. baking powder
3/4 c. butter
Combine dry ingredients. Add butter and mix till crumbly. Prepare 9" x 12" pan by spraying with cooking spray or brushing with vegetable oil. Press dry mixture into the pan.
Topping:
2 eggs
1/2 c. brown sugar
1/2 c. fine coconut
1/2 c. chopped nuts
4 oz. glace cherries, cut up
1 tsp. vanilla
Beat eggs well, add brown sugar. Stir in coconut, chopped nuts, cherries and vanilla. Spread over crumb base. Bake at 300F. for 45 minutes.
