Creamy Cucumber Mold Recipe
CREAMY CUCUMBER MOLD
3 c. water
3 3-oz. pkg lime jello
2 tsp. salt
3 c. sour cream
1 1/2 c. mayonnaise
3 medium cucumbers
In 2-quart saucepan, heat water to boiling. Stir in jello and salt until dissolved. In large bowl mix sour cream and mayonnaise. Gradually stir jello into sour cream mixture until well blended. Refrigerate until thickened. Peel cucumbers and remove seeds and dice. Fold into jello. Pour into mold and refrigerate.
If desired, add chopped pimientos, green onion, green pepper.
