Cucumber Sauce & Tartar Sauce Recipes
CUCUMBER SAUCE
1 c. sour cream
1/4 c. cucumber, chopped but not peeled
4 radishes, thinly sliced (you can substitute 1 tsp. chopped pimento)
2 tsp. prepared horseradish
1 tsp. lemon juice
1/4 tsp. salt
Dash of cayenne pepper
Dash of tarragon vinegar
Combine all ingredients, chill for at least 1 hour. Good with broiled or steamed fish.
TARTAR SAUCE
1 c. mayonnaise
1/2 Tbsp. chopped olives
1/2 Tbsp. chopped sweet pickles (or sweet relish)
1/2 Tbsp. capers
1/2 Tbsp. parsley, finely chopped
Several drops of juice from an onion
Combine all ingredients. Can be served cold with fish or seafood. To serve hot, substitute salad dressing for mayonnaise, heat in top of double boiler over boiling water.
