Hot Potato Salad

HOT POTATO SALAD Ingredients: 8 potatoes 5 slices bacon 1 Tbsp. flour 1/2 c. water 1/2 c. vinegar 2 tsp. salt 3/4 tsp. sugar 1 onion, thinly sliced 2 tsp. parsley In boiling salted water, cook potatoes in skins until just tender. Pan-boil bacon until done. Remove from fat and crumble. To fat in pan, add flour, blend well, then gradually stir in water and vinegar. Cook over direct heat, stirring constantly until mixture boils and thickens. Add salt, sugar and sliced onion. Peel and dice the potatoes, add bacon and pour on hot dressing. Mix lightly and sprinkle with parsley. Serve hot.
