LOBSTER THERMIDOR
Ingredients:
3 Tbsp. butter
2 Tbsp. flour
1/2 tsp. mustard
1/2 tsp. minced onion
Dash pepper
1/2 tsp. salt
1 c. cream
2 c. cooked lobster
1/4 c. chopped sauteed mushrooms
2 Tbsp. grated cheese
Small finger rolls
Make white sauce from butter, flour, seasonings and cream. Add lobster and mushrooms, serve in scallop shells, patty shells, or cut tops from rolls, scoop out centers and heat. Fill heated rolls with lobster mixture. Sprinkle with grated cheese. Brown in hot oven, serve at once.
