Mussel Pie Recipe
MUSSEL PIE
1 qt Mussels (steamed and shelled)
1 small green papaw -seeded & sliced
2 onions (chopped)
3 potatoes (diced)
4 strips of bacon (cut in pieces)
1 tbs. lemon juice
1 tbs. curry powder
1 sprig thyme
1/2 tsp. pepper
1 tsp. salt
1 prepared 10" double crust pie shell
Rinse mussels in cold water and ensure that all loose pieces of the shell are removed; cook for 5-6 minutes. Fry bacon until brown. Remove and set aside. Add onion and potatoes to the remaining bacon grease and fry until the onions are light brown. Add curry powder and other seasonings. Combine with mussels and some of liquid that the mussels were simmered in. Cook until potatoes are tender. Allow the mussel stew to cool before pouring into pastry shell.
Cover with top layer of pastry and bake at 375F until pastry is light brown.
