Nanaimo Bars Recipe
NANAIMO BARS
1/2 c. butter
5 Tbsp. cocoa
1 egg
1 c. shredded coconut
1/4 c. sugar
1 tsp. vanilla
2 c. crushed graham wafers
1/2 c. chopped nuts
Combine butter, sugar, cocoa, vanilla and egg in top of double boiler. Cook, stirring constantly until butter is melted and mixture resembles thin custard. In bowl combine graham crumbs, coconut and nuts. Add cooked mixture and blend thoroughly. Pack into 9" pan. Spread with icing.
Icing:
1/4 c. butter
3 Tbsp. milk
2 Tbsp. vanilla custard powder
1 c. sifted icing sugar
Chocolate Layer:
3 squares semi-sweet chocolate
1 Tbsp. butter
Cream butter. Add milk which has been combined with custard powder. Blend in icing sugar. Spread over bars and let stand at least 15 minutes. Melt chocolate together with butter and spread over top of icing.
