Parsley Potato Salad Ring Recipe
PARSLEY POTATO SALAD RING
3/4 c. mayonnaise
6 c. cubed cooked potatoes
1 c. sliced celery
1/2 c. finely chopped onions
1/2 c. sliced stuffed olives
1/4 c. parsley
1 Tbsp. salt
1/4 tsp. paprika
Dash pepper
Combine ingredients, toss lightly. Pack into 1 1/2 qt. ring mold which has been sprinkled with chopped parsley. Chill. Unmold on lettuce, garnish with tomato wedges.
