PUMPKIN MUFFINS Ingredients: 1 c. canned pumpkin 1/4 tsp. soda 1/2 c. shortening 1 1/4 c. sugar 2 eggs 2 1/4 c. flour 2 1/2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. nutmeg 1/2 tsp. ginger 1/2 tsp. cinnamon Preheat oven to 375F. Stir soda into pumpkin. Cream together sugar and shortening. Add eggs. Sift together dry ingredients and add alternately with pumpkin to the shortening. Grease muffin tins and dust with flour, fill 2/3 full. Bake for 20-25 minutes. Yield: 18 muffins.
