Raspberry Nut Balls Recipe

RASPBERRY NUT BALLS

1 c. butter or margarine
1/2 c. sugar
2 eggs, separated
3 c. sifted flour
1 tsp. baking powder
1/4 tsp. salt
1 c. finely chopped nuts
Raspberry jam

Preheat oven to 325F. Cream butter and sugar. Add egg yolks and beat until light. Sift together flour, baking powder and salt. Blend into creamed mixture. Shape dough into 1" balls. Dip balls into unbeaten egg whites and then into chopped nuts. Place on baking sheets. Press down center with thimble or knife handle. Bake for 5 min. Lightly indent centers again and bake for an additional 15 min. While still warm, fill centers with raspberry jam.

Yield: 5 dozen.
