Tomato Bisque Recipe
TOMATO BISQUE
4 c. milk
1/2 small onion, chopped
6 cloves
1/2 bay leaf
Sprig of parsley
3/4 c. dry bread crumbs
2 c. tomatoes
2 tsp. sugar
1 1/2 tsp. salt
1/8 tsp. pepper
3 Tbsp. butter
Scald milk with onion, spices, parsley and bread crumbs, press through a sieve or mix in a blender. Cook tomatoes and sugar together 15 min, press through sieve. Add seasonings and butter. Combine the two mixtures by adding the tomato SLOWLY to the milk.
Serve at once with croutons or crisp crackers. Serves 6.
