BAKED FISH (UKRAINIAN CHRISTMAS EVE DISH) Ingredients: Whole fish, about 2-2 1/2 lb. in weight 1/3 c. butter or vegetable oil 1/2 c. chopped onion 3 slices day-old bread, diced 3/4 tsp. salt 1/8 tsp. pepper Parsley to taste 1/4 c. chopped celery (optional) 1 egg, slightly beaten Clean, wash and dry fish. Saute onion and celery in butter until almost tender. Stir in bread, add salt, pepper and parsley. Add egg. Stuff bread mixture into fish and sew up opening. Place fish in roaster, bake at 200F for about 3 hours.
