ZUCCHINI MUFFINETTES Ingredients: 5 eggs 1/4 c. cooking oil 1 1/2 c. finely chopped onion 3/4 c. grated cheddar cheese 4 bacon slices, cooked crisp and crumbled 2 3/4 c. grated zucchini 1 c. flour 1 1/2 tsp. baking powder 1/2 tsp. salt Preheat oven to 350F. Beat eggs together, add next 5 ingredients. Stir well, add flour, baking powder and salt. Fill greased muffin tins almost full. Bake for about 30 minutes. Let stand for 5 minutes before removing from pans to cool.
