Lunenburg Soused Cucumbers
LUNENBURG SOUSED CUCUMBERS
3 medium cucumbers, thinly sliced
2 c. sugar
2 c. white vinegar
1/4 tsp. white pepper
Salt
Sprinkle cucumber slices with salt and let sit for about 20 minutes.Combine the sugar, vinegar and white pepper to form a marinade. Press as much moisture as possible out of the cucumber slices, marinate in the vinegar mixture until well marinated.
Sauce:
1 c. mayonnaise
1/2 c. whipped cream
1/2 c. sour cream
2 Tbsp. fresh dill, finely chopped
Combine the ingredients well, add salt and white pepper to taste. Press the moisture from the cucumber slices again, place them in the sauce. Makes a delicious side dish for outdoor barbecues or picnics.
