Maritimers Mint Chocolate Cake

MINT CHOCOLATE CAKE This is a delicious minty chocolate cake made with... beets! 1 1/2 c. sugar 2 extra large eggs 1 c. oil 2 c. pureed beets 6 Tbsp. cocoa 1 1/2 tsp. soda 1 3/4 c. unsifted flour 3/4 tsp. peppermint extract 1/4 tsp. salt 1 tsp. vanilla Combine sugar, eggs, oil and beets and mix. Stir in cocoa, flour, soda, salt and extracts. Beat for 2 minutes at medium speed. Turn into 9" square buttered pan. Bake at 350F. for 45-50 minutes, or until toothpick comes out dry when inserted in center. If desired, spread with chocolate mint icing or frosting. However, this cake is fabulous just as it is.
