Chicken Cacciatore
CHICKEN CACCIATORE
Ingredients:
2 lbs. chicken pieces
Olive oil
1 can tomato paste
1/4 c. water
1/4 c. dry red wine
1/2 tsp. thyme
1 Tbsp. Worcestershire sauce
1 can mushrooms (or equivalent amount fresh, sliced)
2 cloves garlic, minced
1 tsp. oregano
1/4 tsp. salt
1/2 medium green pepper, cut in strips
1/2 c. chopped onion
Brown chicken in oil, drain. Add remaining ingredients. Cover and cook over low heat for 45 minutes, stirring occasionally. Uncover and cook until sauce thickens to desired consistency. Serves 4–6.
