Cod Fish Cakes
COD FISH CAKES
Ingredients:
3 cups of mashed potatoes
1 lb. flaked cooked cod
2 Tbsp. chopped parsley
1 egg, slightly beaten
1 tsp. pepper
1 medium onion, finely chopped
Flour
Cooking oil
Soak salted cod overnight and rinse well before cooking. Drain well and place in a large mixing bowl along with the parsley, well beaten egg, minced onion, mashed potatoes, and pepper. Blend thoroughly together and allow ingredients to cool before forming mixture into small patties coated with flour.
Heat skillet or electric frying pan to medium to medium-high temperature with only enough oil to avoid burning. Cook cod cakes to a golden brown colour.
