Indian Cornmeal Pudding
INDIAN CORNMEAL PUDDING
Ingredients:
1/2 c. cornmeal
4 c. milk
1 c. brown sugar
2 tsp. combined spice (ginger, nutmeg, cinnamon)
1 tsp. salt
1/2 c. dark molasses
In large bowl, combine cornmeal and 1 c. of milk. Scald the remaining milk in top of double boiler, pour into the cornmeal mixture, stirring constantly. Cook until mixture is the consistency of cooked cereal (approx. 15 minutes).
Remove from heat and stir in the sugar, spices and salt. Add molasses and cream. Bake in greased 2-qt. casserole at 275F. until set, about 1 hour. Serve warm or cool with cream, whipped cream, milk, ice cream or desired topping. Serves 6.
