No-Bake Chocolate Cheesecake
NO-BAKE CHOCOLATE CHEESECAKE
Crust:
1/3 c. margarine, melted
1 1/4 c. graham cracker crumbs
3/4 c. sugar
Combine ingredients and press firmly into the bottom of a 9" springform pan. Chill thoroughly. (If you prefer, you can use a ready-made 9" graham wafer crust.)
Filling:
2 8-oz. pkgs of cream cheese, softened
1 envelope unflavored gelatin
2/3 c. water
4 1-oz squares semi-sweet baker's chocolate, melted
1 14-oz can sweetened condensed milk
1 tsp. vanilla
1 c. whipping cream, whipped
In a small saucepan, soften the gelatin in the water. Dissolve gelatin completely over low heat, set aside. In a large mixing bowl, beat the cream cheese and melted chocolate together until fluffy. Add the condensed milk and vanilla, beat till smooth. Stir in the gelatin mixture. Carefully fold in the whipped cream, pour the mixture over the crust. Chill for at least 3 hours or till completely set.
