Old-Fashioned Swiss Steak
OLD-FASHIONED SWISS STEAK
Ingredients:
2 Tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. paprika
1 1/2 lb. round steak, cut 1" thick
2 Tbsp. cooking oil
1 20-oz can tomatoes
3 large onions, sliced thin
1/2 c. chopped celery
1 small bay leaf, crushed
1/2 tsp. oregano (optional)
1 Tbsp. meat sauce
Combine flour, salt, pepper and paprika. Sprinkle half over one side of steak, tenderize with mallet or fork. Repeat on other side. Cut meat into serving size pieces. Heat oil in large skillet. Add meat, brown slowly on both sides. Add remaining ingredients, cover tightly and simmer until meat is tender (approx. 2 hours). Serves 4.
