Pickled Herring
PICKLED HERRING
Ingredients:
10 herrings (milkers)
4 onions, sliced
1 lemon, sliced
1 Tbsp. vegetable oil
Wash herrings well, soak overnight in cold water. Remove head, tail and gills. Pull milkers out and reserve for brine. Cut in pieces. Place layer of herring, layer of onion slices, layer of milker and lemon slices. Repeat layers till herring and onion are all used.
Brine:
2 c. water
1 c. vinegar
2 Tbsp. sugar
1 Tbsp. pickling spice
Bay leaves
Boil ingredients together, cool and pour over herring. Add vegetable oil, cover and let stand at least 2 days.
