Potato Corn Beef Salad
POTATO CORNED BEEF SALAD
Ingredients:
2/3 c. diced cooked potatoes
1 Tbsp. sliced green onion
2 hard cooked eggs, diced
1/2 c. diced corned beef
3 Tbsp. chopped dill pickles
3 Tbsp. chopped celery
1 tsp. prepared mustard
Mayonnaise, tabasco
Toss first 5 ingredients together. Add prepared mustard and a few drops of Tabasco to 1/4 c. of dressing. Gently stir into the potato and meat mixture. Add more dressing to moisten, if necessary. Chill several hours to blend flavors and arrange in a lettuce-lined bowl. Garnish with chopped fresh dill.
