Spring Vegetable Medley
SPRING VEGETABLE MEDLEY
Ingredients:
8 new potatoes
1 bunch green onions, cut into 1" pieces
2 c. new peas
1 – 1 1/2 c. white sauce
1/4 c. grated cheese
Cook potatoes in small amount of boiling salted water for about 15 minutes; add onions and peas and continue cooking until vegetables are just tender – 10 to 15 minutes. Drain.
Arrange vegetables in 1 1/2 qt. casserole, add white sauce. Top with cheese. Brown in medium oven (375F) for about 10 minutes.
Serves 6-8.
