Yorkshire Pudding
YORKSHIRE PUDDING
7/8 c. flour
1/2 tsp. salt
1 c. milk
3 eggs
beef drippings (about 1/2 c.)
Sift flour and salt. Add milk gradually. Add eggs and beat 2 minutes. Chill 20 minutes.
Preheat oven to 425F. Cover bottom of 8" square pan with beef drippings or pour drippings into 8 large muffin tins. Place in oven till sizzling hot. Quickly pour in the batter to a depth of 3/4". Place pans in oven and reset temperature to 375F.
Bake 50 minutes for cake pan, 30 minutes for muffin tins.
